Caramelized Bananas
- 6 fresh bananas
- 5 oz granulated sugar
- 2 oz butter
- 2 oz Myers’s dark rum
- 5 oz heavy whipping cream
Ice Cream and Garnish
- 5 oz coconut ice cream
- 30 fresh mint leave
- 3 tablespoons almonds (sliced and toasted)
- 12 fresh red raspberries
Instructions
Remove the skin and cut each of the bananas into 5 pieces. In a hot pan, melt the granulated sugar until golden brown. Add the butter and bananas. Deglaze with the run and cream; simmer until the mixture coats the bananas. To serve, scoop the coconut ice cream into 6 small dishes. Place 5 banana pieces on each dish around the ice cream. Garnish with mint leaves, toasted almonds and fresh raspberries. Serves 6.
